Spaghetti Sauce

Oh, hello there!

Here's a recipe to introduce myself:

I thought I'd start out by sharing my recipe for homemade spaghetti sauce since it's one of my favorite things to make. I'm kind of a pantser when it comes to cooking, so my recipe changes depending on what I've got in the fridge at the moment.

So. Spaghetti Sauce
1/2 medium size onion (I love onion, so it's always a must)
1 clove garlic (more or less depending on how much you like garlic)
1 1/2 cups (ish) sliced mushrooms
1/2 green/red/yellow/orange pepper (whichever you prefer, or mix and match)
1 pablano pepper (tonight was my first time using one, it gives it quite the kick)

So you should sauté all these together in a pan with some olive oil. I also added some pepper.
At this point you can either add in some already made pasta sauce (Ragu, etc), or you can for real make your own.
If you add premade sauce, just add it once all the veggies are cooked and heat it up.
If you want to make your own, add in some tomato sauce/paste (whichever you have on hand). Add some water to the paste to thin it out.

Then you need SPICES! I usually stick to oregano and basil to keep it simple. You can also add garlic powder (especially if you don't have fresh garlic cloves on hand). This is pretty much to taste. Remember that the flavor of the spices will come out more as you cook it.
So, throw in your spices (usually about equal amounts oregano to basil) and let the sauce simmer for 15-20ish minutes.

VOILÀ! Spaghetti Sauce!

As you can see from this recipe, I'm pretty much a pantser at cooking--especially when I know what I'm doing. If I have a recipe, I'll follow it pretty closely. Especially if said recipe was written by Julia Child (Julia says stir for three minutes? You bet your butt I will stir for three minutes, no matter how pointless it seems).
